Our Cranberry Pistachio Shortbread wins me over again and again. Buttery shortbread, the slight acidity of cranberries, the rich crunch of nuts – they are irresistable.
This is not a classic combination for shortbread, but I am sure it will be in the future. Shortbread is a traditional Scottish biscuit that was made for celebrations such as Christmas, New Year’s Day, or weddings. As the dough is made up of very few ingredients, they must be of superior quality. Real butter and excellent vanilla are paramount. Shortbread’s mild taste is complemented by aromatic ingredients that are not too sweet.
